Food, glorious food! When people think of Haute Cuisine, Central America is not usually the first place that comes to mind – reinforcing the stereotypical idea of Nicaragua being only “rice and beans”. Yes, rice and beans are a staple part of the Nica diet in the form of gallo pinto, refried beans, rice pudding and the hearty bean and egg soup. Corn has also been a historical ingredient to many traditional dishes. But that is not the full picture! Thanks to our rich cultural history and the mix of traditional indigenous ingredients with new elements introduced by the Spaniards, Nicaragua has inherited a diverse range of cuisine, each dish bringing us on a journey into a land full of ancestral traditions. There are many delicious typical dishes that are sourced locally and vary with the different regions and climates.
Nicaragua is also increasing becoming a place to enjoy gourmet food, prepared by specialty chefs. More and more restaurants are incorporating different dietary options such as vegetarian and vegan.

  • Vigoron – pork rind, yucca and cabbage salad

  • Frito – gallo pinto, pork, tajadas verde and maduro with cabbage salad
